According to historians, the star dish Biryani was popularised throughout the country during the time of Mughals. It is said that the name is derived from the Persian word Birian meaning ‘fried before cooking’.
There are many tales associated with our favorite biryani. It is believed that the biryani originated in Iran (previously known as Persia).
According to a story, it was Mumtaz Mahal’s demand to create a dish of rice and meat to feed seemingly undernourished soldiers, It is said that Mumtaz Mahal once visited army barracks and found the army personnel under-nourished. She then asked the chef to prepare a special dish which can provide balanced nutrition to the soldiers, and that’s how the biryani was created.
According to another story, it was conqueror Taimur who brought along the dish during his exploits in India. Moreover, when the British deposed Nawab Wajid Ali Shah to Kolkata (formerly Calcutta), his chef created the Calcutta biryani by adding potatoes. According to biryanibykilo ,Tehri biryani, a vegetarian version of the dish, is believed to have been created during this time as food for bookkeepers of the court who would not eat Mutton biryani.
However there is also vast variation in the flavors of the biryani with respect to different regions of the country .
